eats :: veggie + rice stir-fry
A lot of times, I don’t cook with a recipe. This is one of those times. To me, stir-fry is simple: throw a bunch of veggies in a skillet, cook ‘em up and toss some rice in there.
I would include a photo, but I was too hungry to make it look pretty. Perhaps when I eat the rest of it later this week.*
Veggie & Rice Stir-fry
Olive Oil
Garlic (minced)
Onion (small chunk chopped up)**
1/2 Carrot (chopped)
1/2 Red Bell Pepper (chopped)
1 Small Zucchini (chopped)
6 or 7 Mini-Portobello Mushrooms (chopped)
1/2 Cup Rice (cooked)***
1 teaspoon Hoisin Sauce****
Drizzle a bit of Olive Oil in a skillet over medium-high heat (I set my burner to 7). Toss in the Garlic and Onions and cook until the onions are translucent. Then I add the veggies in order from hardest to softest. I find that this ensures semi-even cooking. And I will take semi-even! Therefore, in go the: Carrots, Zucchini, Bell Pepper and Mushrooms. Let that cook up for a few minutes and then add the Hoisin Sauce. Stir it in well so that it coats all the veggies. Let that sit for about a minute, then toss in the rice. If you’ve just cooked the rice, just dump it in. My rice was leftover from Chinese food earlier in the week, so I added a few splashes of water to soften it up again. Mix it around until well combined and heated throughout. Serve yourself!
I find that I always eat too much when I put my food on a big dinner plate. So instead, I enjoyed my stir-fry in a small bowl. Lemme know if you try my version of stir-fry! Do you have any versions that I should try? Remember, no meat please! (Unless that meat is of the seafood variety!)
*I suck at cooking for one person most of the time. Which is annoying, considering I live alone. I almost always make too much food. Gotta love leftovers.
**Do you like my oh-so-specific instructions? I don’t really know the difference between chopping, mincing, dicing, etc. I only said to have minced garlic because I have the kind in the jar already minced. It says so on the label. I make the chunks bite-sized or smaller most of the time.
***I used leftover white rice from ordering Chinese food this weekend from friends. Leftovers at their finest, kids!
****This is the tastiest sauce ever! You can find it with the Asian foods at the market. It’s uber-delicious and a tiny bit goes a long way.

reba :: welcome aboard
In an effort to live a healthier life, I’ve decided the best way to make sure I actually do what I want to do is to put it out into public realm. If I’m accountable for my actions, maybe making the habits will be easier and maybe making the changes will be less painful.
